Pumpkin Spice Sweet Potato Soufflé
Soufflé. A lighter take on a sweet potato side dish. We like this because it’s whipped, tastes light and has some extra protein at the same time. With a heavy holiday meal & many mouths to feed, this is one of our favorite side dishes because with the Cured Nutrition Cinnamon & Honey & Pumpkin Spice your boring potato side dish just became a bit more appealing. Pumpkin Spice Sweet Potato Soufflé
Serves approx. 6-8 people
- 3 T CURED Cinnamon & Honey
- 2 T CURED Pumpkin Spice
- 1⁄4 C Butter (1⁄2 stick)
- 4 Medium sized sweet potatoes
- 2 Eggs
- 1 t Vanilla extract
- 1⁄2 C whole milk
- Amaretti Cookie crumble topping (optional)
Bake sweet potatoes at 400° for 15 minutes or until slightly soft & easy to peel. With a mixer, add peeled potatoes cut into quarters, 1/4 C butter & 1/2 C milk and bgin to mix. Add reminder of ingredients and mix on a high speed to obtain a whipped texture until it turns slightly fluffy. Move into baking dish and bake for 30-45 min at 350° or until top begins to brown.
For a sweeter touch, crumble Amaretti Cookies on top prior to baking.
